Pumpkin Roll Recipe For Thanksgiving!

I hope you all have a
Happy Thanksgiving!

This is the recipe I use, when I make them.
One can of pumpkin is enough to make two
pumpkin rolls.

Pumpkin Roll
Cream together:
3 eggs
1 C sugar
Fold in:
2/3 C pumpkin
1 tsp. baking soda
2 tsp. pumpkin pie spice
3/4 C flour

Pour into well greased cookie sheet
with edges, 10" x 15"

Bake at 375 deg. for 15 min.
Remove from oven and roll in a towel
sprinkled with powdered sugar
and let cool completely.

Unroll and spread with filling, reroll and
place seam side down.

You can sprinkle a little bit of powdered
sugar on top, if desired.

Filling:
8 oz. cream cheese
4 Tbls oleo
1 tsp. vanilla
1 C powdered sugar

Keep refrigerated.  You can wrap it
in foil and freeze.

Be watching for a sneak peek
for my give away, coming soon!

Until next time...
